El vermú gallego que sabe a Albariño (Spanish/ English version)

¡Es Nochebuena! Y para celebrar esta noche tan especial y la 50 publicación en Devinos con Alicia, os volvemos a traer una de las referencias con más impacto del año de mano de Vermutería de Galicia. Es muy posible que muchos de vosotros recordéis la sensación cuando probasteis por primera vez su buque insignia: St. Petroni, el vermú de Albariño. Yo ¡todavía lo recuerdo dado que fueron unas semanas trascendentales en mi carrera profesional y a nivel personal por las personas tan especiales que conocí! Sin embargo, hoy no quiero centrarme en este producto que, para mí, fue un increíble descubrimiento a principios de año sino que hablaremos de algo más excepcional (si cabe)… y es que, en un único ánimo de renovación y ampliación de su gama de productos Vermutería Galicia nos sorprende a día de hoy con Galletas elaboradas con St. Petroni y, además, nos propone el perfecto self service de este vermú de Albariño ideado para paliar la sed en estas fechas.

Antes de nada recordemos a una Galicia embotellada y con sabor a vermú de Albariño

A finales de Marzo de 2014 hablamos de él, sin embargo, os recordaré los fundamentos de St. Petroni para evitar que retrocedáis. Se trata de un vermú de Albariño que nace en el corazón de Terras Sacras, más concretamente en el Valle del Padrón y, obviamente, su esencia se inspira en los aspectos organolépticos que diferencian este entorno ubicado en Galicia. Solo su procedencia no hace de él una referencia tan a tener en cuenta, a esto hay que unir su cuidadísima elaboración. Una de las claves de este proceso es el tiempo sobre lías que pasa el vino base durante la vinificación después de la selección los mejores frutos que otorga a Vermutería de Galicia las cepas de la variedad Albariño.

Después de terminar la fase anterior, el vino obtenido será macerado artesanalmente con 29 botánicos autóctonos diferentes. Un ejemplo de ellos será el asente – aspecto mágico de St. Petroni – junto a loureiro, hierba luisa, menta, romero, tomillo, salvia, piel de naranja dulce y amarga, pulpa de limón, flor de hibisco, manzanilla, entre otros muchos. Para rematar el vermú, el producto resultante es ensamblado, reposado y filtrado para ¡dejarnos a todos con la boca abierta!

Una copa de St. Petroni es algo único y excepcional. En su día lo definí como «Alma Gallega», y lo sigo manteniendo. Nos encontramos un vermú color rojo teja oscuro con reflejos cobrizos, limpio y brillante. Aunque si tengo que destacar una característica sobresaliente será la sensación que nos transmite en nariz y boca. En la fase olfativa nos encontramos un vermú complejo mezcla de esas frutas blancas tan características en la variedad aunque ya maduras e incluso en compota, vainilla y delicadas notas de brioche. Todo a su vez complementado con notas balsámicas, especias y ligeramente amontilladas que desaparece tras reposar en la copa.

En la fase gustativa entra de forma ágil, suave y elegante con una textura aterciopelada, dejando latente la acidez natural de los vinos Albariño aunque de forma sorprendentemente integrada. Redondo y sutil, impregna con su sabor cada milímetro de la boca y nos deja un intenso y persistente aroma retronasal tras ingerirlo, con la chispa amarga que caracteriza generalmente a los vermús. ¡No pasa desapercibido en absoluto! incluso a principios de noviembre fue mencionado en twitter por Luis Gutierrez, delegado de R. Parker en España, uno de los gurús vinícolas internacionales que, a pesar de no tener por costumbre catar este tipo de productos, ¡no se pudo resistir a probar St. Petroni!

Pero… ¿de dónde nace la idea para la elaboración de Vermú St. Petroni? La leyenda

Este vermú de Albariño parte de la ilusión de cinco miembros implicados en promover la cultura gallega y relacionados con el vino, destilados y otras bebidas espirituosas. De este modo nace en primer lugar Vermutería de Galicia como una empresa que pretende aunar la historia, la cultura, el arte, la botánica, la viticultura y la enología de la Tierra de Iria. Esta filosofía dará lugar a St. Petroni, un vermú pionero en Galicia y a nivel internacional por sus especiales características, ya que en lugar de estar elaborado con vinos de baja calidad se parte se una base excepcional.

Pero St. Petroni no solo se compone de grandes cualidades, sino que encierra una mágica historia tras él y que podemos ver en la serigrafía plasmada en la botella. Vermutería de Galicia, inspirándose en la cultura de su tierra y con la idea de crear un paralelismo entre la marca y la tradición nos encontramos en su packaging con una referencia alCamino de las Ocas(una ruta dedicada a una criatura ancestral de incesante fuerza mágica y sabiduría). En la cultura gallega la oca siempre ha sido considerado un animal sagrado por su plumaje blanco como símbolo de pureza, por su patas palmeadas con tres dedos como recordatorio de la Santa Trinidad y donde los opuestos están equilibrados. Como movilizadora de los elementos de tierra, mar y cielo, en busca del fuego materializado en el sol y, por último, como estrategas organizativas al trazar un vuelo que mejora el trabajo en equipo.

Hoy es una noche, para muchos de nosotros, dedicada a la espiritualidad y a la familia. Los antiguos decían que una de las metas del ser humano es la misión de crear un puente entre el cielo y la tierra, entre lo espiritual y lo material. Para ello debe seguir la guía que nos ofrecen los elementos sagrados a través del trabajo, la meditación, el descanso, etc. Llegados a este punto St. Petroni, a través de su mágica aura, nos transmite que la vida es un laberinto lleno de experiencias en el que las respuestas solo podemos encontrarlas nosotros mismos, y serán las que indiquen nuestro corazón y las que entiendan nuestra mente. Si no confiamos, de no alcanzar este punto trascendental, perdemos la libertad:

«Mira la tierra, mira el cielo, toma una respiración profunda… y después, piensa. Es el camino a nuestro interior».

Ligado a esto, nos encontramos a lo largo de la historia grandes artistas que se han caído bajo en embrujo de estas leyendas como Wilde, Dalí, Da Vinci, Botticelli, etc … que también vienen de mano de un elemento sagrado, el asente, hierba santa esencial para la elaboración de un vermú inmejorable.

Así llegamos al final de nuestra historia. Tan importante llegó a ser este punto geográfico como punto estratégico y espiritual que, incluso el cristianismo, eligió esta tierra (hasta ese momento de tradición pagana) para establecerse… evolucionando su nombre etimológicamente desde Villa Petroni hasta Padrón. La tierra donde se ubica la elaboración de este peculiar vermú se encuentra en el principio de la Ría de Arousa, entre los afluentes Ulla y Sar… recibe el nombre de Padrón. Según la documentación que ha llegado hasta nuestros días, esta tierra era un importante puerto fenicio donde los barcos llegaban repletos de especias, chock, tintes, vino, piedras, metales nobles (extraídos de las islas de las costas gallegas), etc, No obstante, también trajo consigo técnicas de cultivo entre las que destacó la vinifera Ponto Vitis, antecesora de la mayoría de las variedades de uva blanca existentes en Europa y, por tanto, de la Albariño (por lo que se considera la cuna de ésta).

Hemos querido dar testimonio de este regalo con la imagen superior, en un guiño de agradecimiento por este regalo del que puedo decir que es un auténtico manjar.

Para esta Nochebuena St. Petroni propone… 

No hay otra manera mejor de conocer este vermú que abriendo la botella y sirviéndote una copa. Para este momento de deleite desde Vermutería de Galicia nos han hecho la siguiente recomendación. Self service ideal para un vermú extraordinario siguiendo estos sencillos pasos:

  1. Elige una copa de vino en la que ponemos dos hielos esféricos o con el menor número de aristas posibles. La razón de preferir este tipo de hielo se debe a que un hielo cúbico tiene más superficie de contacto con el vermú y por lo tanto de derrite antes.
  2. Enfría la copa rotando los hielos en su interior y elimina el excedente de agua generado.
  3. Corta un twist de naranja (únicamente la piel exterior – parte naranja – ya que la piel interna – parte blanca – transmitiría demasiado amargor a tu copa). Eligen este cítrico y no otro por su complementación con St. Petroni ya que el limón, por ejemplo, resaltaría demasiado la acidez del vermú.
  4. Emulsiona los ácidos grasos de la naranja mediante el twist recién cortado.
  5. Añade el vermú previamente enfriado a una temperatura entre 10 a 12ºC hasta cubrir los hielos, … ¡justo cuando veas que los hielos comienzan a flotar, tampoco debes llenar la copa! Es un error añadirlo a temperatura ambiente ya que tardará más a enfriar y provocarás que los hielos se derritan antes, algo que aguará tu vermú.
  6. ¡Ya puedes disfrutar de tu copa de St. Petroni!

I can still remember it because it was a momentous week in my professional career and on a personal level due to the special people I met!

However, today I want to focus not on this product, which for me was an incredible discovery earlier this year, but rather talk about something exceptional (if possible) … and that is, in the spirit of renewing and expanding their product range Vermutería Galicia surprises us

Firstly, let’s think of a Galicia in a bottle with the flavor of Albariño vermouth.

Late last March, we had talked about it but I’ll refresh your memory on the basics of St. Petroni so that you don’t have to look back through the archives. It’s an Albariño vermouth born in the heart of Terras Sacras, specifically in Valle del Padrón and, as it goes without mentioning, its essence is inspired by the organoleptic characteristics that differentiate this environment located in Galicia. Only, their origin alone is not enough to make it stand out on its own, for becoming a reference worth mentioning, we must also add into the mix its careful and meticulous elaboration process. A key to this process is the time which the base-wine spends on lees during vinification after only the best fruit that give Vermutería de Galicia the deserved Albariño name have been selected.

After completing the previous phase, the wine obtained will be macerated artisanally with 29 different native botanicals. An example of them is Artemisia absinthium – the magical touch of St. Petroni – with laurel, lemon verbena, mint, rosemary, thyme, sage, sweet and sour orange skin, lemon pulp, hibiscus flower, chamomile, among many others. And to top it all off, the resulting vermouth product is assembled, settled and filtered, leaving us with a jaw-dropping final product!

A glass of St. Petroni is unique and exceptional. There was a time when I defined it as «Alma Gallega», and I still maintain it. We have here a dark red vermouth with copper hints, clean and bright. Even if I had to highlight just one outstanding characteristic, it would be the feeling that it conveys to the nose and mouth. Our olfactory senses are greeted by a complex mixture of those white vermouth fruit so characteristic of the varietal, although ripe and even in compote; vanilla and delicate notes of brioche are present. Everything in turn is complemented with balsamic notes, spices and lightly influenced by Amontillado which vanishes after a while of sitting in the glass.

On the palate it enters quite easily, soft and elegant  with a velvety texture, leaving the natural acidity of the Albariño wines but in a surprisingly integrated way. Round and subtle flavor permeates every millimeter of your mouth and leaves a lingering and intense retronasal aroma after ingestion, with a bitter spark that usually characterizes the vermouths. This just can´t be passed up! In addition, a mention was made on twitter at the beginning of November by Luis Gutierrez, delegate to R. Parker in Spain and international wine guru who, despite not habitually tasting these types of products, couldn´t resist trying St. Petroni!

But… where does the idea for making Vermú St. Petroni come from? The Legend

This Albariño vermouth comes from the dream of five members involved in promoting the Galician culture who were also working with wine and other distilled spirits and beverages. From this moment, Vermutería de Galicia was born as a company whose intention was to unite the history, culture, art, botany, viticulture and oenology of Tierras de Iria. This philosophy gave life to St. Petroni, a pioneering vermouth not only in Galicia but on an international level due to its special characteristics; it is produced with an exceptional base rather than a lower grade wine.

But St. Petroni not only consists of great qualities, it contains a magical story behind it as we can see it captured on the finely printed serigraphy on the bottle. Vermutería de Galicia, inspired by the culture of their land and the idea of creating a parallelism between the brand and the tradition we find in its packaging a reference to the Camino de las Ocas (Road of the Geese), a route dedicated to an ancient creature of incessant magical force and wisdom. In the Galician culture the goose has always been considered a sacred animal for its white plumage as a symbol of purity, its webbed feet with three fingers as a reminder of the Holy Trinity and where opposites are balanced. As a mover of the elements earth, sea and sky in search of fire materialized in the sun and, finally, as organizational strategists charting a flight that improves teamwork.

Tonight is a night, for many of us, which is dedicated to spirituality and family. The elders would say that one of the goals of the human being is the mission of creating a bridge between heaven and earth, between the spiritual and the material. To do this, one must follow the guidance that the sacred elements provide us through work, meditation, relaxation, etc. At this point St. Petroni, through its magical aura, conveys that life is a maze full of experiences in which the answers can only be found by us, and which our hearts will indicate and our minds will understand. If we do not believe that we could reach this transcendental point, we lose our freedom, «Look at the earth, look at the sky, take a deep breath … and then think. It is the way to our interior.»

The land where the development of this peculiar vermouth is located is at the beginning of the Ria de Arousa, including tributaries Ulla and Sar … called Padrón. According to the documentation which has survived to this day, this land was a major Phoenician port where ships arrived full of spices, chock, dyes, wine, stones, precious metals (extracted from the islands of the Galician coast), etc. However, there are farming techniques from which the vinifera Ponto Vitis, ancestor to most of the varietal of white grapes in Europe including the Albariño varietal, came about. It is therefore why that this land is considered its birthplace.

Thus we come to the end of our story. This geographical location became such an important spiritual and strategic point that even Christianity chose this land (up until then it was of pagan tradition) to settle on… evolving its name etymologically from Villa Petroni to Padrón.

These are some tasty little tidbits first created for the presentation of this product in Padrón earlier this year and, to this day, are produced exclusively for very special events and presentations. We wanted to give testimony to this gift with the picture above, in a nod of gratitude for this gift that I can say it is a true delicacy.

Recommends…

There is no better way to become acquainted with this vermouth than opening the bottle and serving yourself a drink. For this moment of delight, Vermutería de Galicia have made the following recommendation. Ideal Self Service of an extraordinary vermouth following these simple steps:

  1. Choose a wine glass in which we place two spherical ice cubes or some with the least possible number of edges. The reason we prefer this kind of ice is because a standard ice cube has more surface to contact with the vermouth and can therefore start melting before.
  2. Chill the glass by stirring the ice around and eliminate the excess water.
  3. Cut an orange twist (only the outer skin or rind because the inner skin – white part – will transfer too much bitterness to your glass). This citric fruit is chosen over others because it complements St. Petroni, while lemon for example, would highlight the vermouth acidity too much.
  4. Emulsify the fatty acids of the orange through freshly cut twist.
  5. Add the previously cooled vermouth, chilled to a temperature between 10 to 12 ° C, until it covers the ice … just until you begin see the ice begin to float. You shouldn´t fill the cup either! It would be a grave error to pour it at room temperature as it would take longer to cool and cause the ice to melt before, something that will undesirably water down your vermouth.
  6. Now you can enjoy your glass of St. Petroni!
